Goulash Recipe

I can remember back when I was kid my mom always making a big pot of goulash in the fall. This easy dish only takes around 20 minutes to cook up and there'll be lots of leftovers. Like chili and other stews, the taste of goulash only gets better as it's re-heated.

Goulash Recipe (adapted from allrecipes.com)

2 quarts stewed tomatoes
1/2 cup diced onions
1/2 cup diced red peppers
1 clove garlic, crushed
1 pound ground beef
1 1/2 cups uncooked macaroni
2 teaspoons paprika
2 teaspoons chili powder
salt & pepper to taste

1. Brown ground beef in high-sided pot and drain fat. Remove cooked ground beef from pot and set aside.
2. Slowly cook onions, red peppers, and garlic in same pan you used to brown the beef, making sure to not allow them to brown. Remove vegetables from pot and set aside.
3. Pour both quarts of stewed tomatoes into the pot and using an immersion blender, blend until smooth.
4. Add back the cooked ground beef, as well as the cooked vegetables to the pot.
5. Add paprika and chili powder.
6. Bring to a simmer. Stir in the uncooked macaroni and allow to boil for 10-12 minutes or until macaroni is cooked through.
7. Adjust seasoning to taste and enjoy!
